Ingredients:
2 chicken breasts (washed and chopped into small pieces)
1 small onion (chopped)
2 carrots (grated or sliced)
2 celery stalks (chopped)
1 garlic clove (minced)
6 cups chicken broth
1 cup noodles (or any pasta of your choice)
Salt and pepper to taste
1 teaspoon dried herbs (such as thyme or basil)
2 tablespoons vegetable oil
Instructions:
In a large pot, heat the oil over medium heat. Add the onion, carrot, celery, and garlic, and sauté for about 5 minutes until the vegetables soften.
Add the chopped chicken to the pot and cook until browned on all sides.
Pour the chicken broth into the pot, bring to a boil, then reduce the heat. Cover and simmer for 20 minutes.
Add the noodles and cook for an additional 10 minutes or until the noodles are tender.
Taste the soup and add salt and pepper as needed.
Before serving, sprinkle dried herbs on top for extra flavor.
Serve hot with fresh bread on the side.
Tips:
You can substitute the chicken with turkey for a different flavor.
For an added twist, you can squeeze a little lemon juice or grate some ginger for extra freshness.
Enjoy this delicious, warm, and nutritious chicken noodle soup!
