🥖 Step-by-Step Instructions
Step 1: Prepare the Base Dough (Choux Pastry)

In a medium saucepan, combine water, butter, and salt. Heat over medium flame until the butter completely melts and the mixture begins to gently boil. This step is important because the heat activates the dough structure.

Once boiling, reduce the heat slightly and add the flour all at once. Stir vigorously with a wooden spoon. The mixture will quickly form a thick dough ball that pulls away from the sides of the pan. Continue stirring for about 2–3 minutes to dry out the dough slightly. This helps the puffs rise better in the oven.

Remove the pan from heat and allow the dough to cool for 5 minutes. This is important so the eggs do not cook when added.

Step 2: Add Eggs Gradually

Add eggs one at a time into the slightly cooled dough. After each egg, mix thoroughly until fully incorporated. At first, the mixture may look separated, but it will come together into a smooth, glossy dough.

This step requires patience. The dough should become soft, thick, and slightly sticky but pipeable. If it feels too stiff, the eggs may be slightly small, so you can add a small extra beaten egg.

Step 3: Add Cheese and Seasoning

Fold in the grated Gruyère cheese, black pepper, and nutmeg (if using). Mix until evenly distributed. The dough should now smell rich, buttery, and slightly nutty from the cheese.

Step 4: Shape the Cheese Puffs

Preheat your oven to 200°C (390°F).

Line a baking tray with parchment paper. Using a spoon or piping bag, place small mounds of dough onto the tray, leaving space between each puff as they will expand significantly.

Each puff should be about the size of a walnut.

For extra flavor, sprinkle a little grated cheese or seeds on top.

Step 5: Baking Process

Bake in the preheated oven for 10 minutes at 200°C, then reduce the temperature to 180°C (350°F) and continue baking for another 15–20 minutes.

Do NOT open the oven door during the first 15 minutes, as sudden temperature changes can cause the puffs to collapse.

The gougères are ready when they are golden brown, puffed up, and light to the touch.

Step 6: Cooling Stage

Remove the tray from the oven and let the cheese puffs cool for at least 10 minutes. This helps them set inside and develop their airy texture.

Serve warm or at room temperature.

🧠 Tips for Perfect Cheese Puffs
Always add flour to boiling liquid quickly to form proper dough structure.
Eggs must be added gradually for smooth consistency.
Do not over-bake or they may become dry.
Use strong-flavored cheese like Gruyère for authentic taste.
If puffs deflate slightly after baking, it is normal as steam escapes.
